Wow it is almost Christmas
We had a great Thanksgiving. We started out at Pep with their annual Thanksgiving dinner and then on Saturday we had the Carother's Thanksgiving. Lots of good food and family time!!!

Pizza crust- Pioneer Woman recipe
FOR THE CRUST (MAKES TWO CRUSTS):
1 teaspoon Active Dry Or Instant Yeast
4 cups All-purpose Flour
1 teaspoon Kosher Salt
⅓ cups Extra Virgin Olive Oil

Preparation Instructions
TO MAKE THE CRUST:
Sprinkle yeast over 1 1/2 cups warm (not lukewarm) water.
In a mixer, combine flour and salt. With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined.
Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and store in the fridge until you need it. ***It’s best to make the dough at least 24 hours in advance, and 3 or 4 days is even better.

Fair and Will's 1st day of school
Will had his first day of pre-k on the 8th. He likes it and enjoys getting to see all of his friends 3 mornings a week. We had the Amarillo fair this past week and we are all pooped. We started on Thursday and finished Sunday night. Brett won the best of show award and the best of 4H award with his 4H plaque Saturday at an awards ceremony. I did okay with my entries and 4Y did great with the heifers. Hope everyone is doing great and has a great fall. Come on cooler weather. I'm coaching Will's soccer team and cooler weather would be so welcome.

PW's cinnamon bread remake
Pw made this, I decided it would be easier to do it in the bread machine. SO much easier.
1 cup Milk
6 Tablespoons Butter
2-½ teaspoons Active Dry Yeast
2 whole Eggs
⅓ cups Sugar
3-½ cups All-purpose Flour
1 teaspoon Salt
⅓ cups Sugar
2 Tablespoons Cinnamon
Egg And Milk, Mixed Together, For Brushing
Melt 6 TBS of butter in microwave, then add milk. Put this in the bottom of the bread machine. Add the eggs, 1/3C sugar, salt, flour and finally the yeast. Turn on the dough setting and forget about it for 1 1/2 hrs. Take it out and roll it out to about 1/2 inch. Spread melted butter, 1/3 C sugar and 2 Tbs cinnamon on the dough and then roll up. Be sure to seal the sides. Put in a greased pan and let rise for about an hour. Bake at 350degrees for 40 minutes.

White chicken green chili enchiladas
White Chicken Green Chile Enchiladas from crackedupkitchen.blogspot.com
12 corn tortillas
3 cups shredded chicken
seasoned salt & pepper for chicken
3 cups shredded monterey jack cheese, divided
3 Tb butter
3 Tb flour
1 c. sour cream
1 can chicken broth (2 cups)
salt & pepper
1 7 oz can diced green chiles
cilantro for garnish
Preheat oven to 400. Mix 1 1/2 cups cheese with the chicken after seasoning the chicken well. Either roll the enchiladas individually or dice the tortillas into 1'' squares and layer half the tortillas on the bottom of a 9x13 pan. Top with the chicken/cheese mixture and layer the other half of the tortillas on top.
In a large skillet melt the butter and sprinkle the flour in, stir and let cook 1 minute. Add the chicken broth and whisk until smooth. Cook over medium heat until thick and bubbly. Stir in sour cream and green chiles. Taste and adjust salt and pepper to yourliking. Pour the sauce over the enchiladas and top with the remaining cheese. Bake 20-25 minutes. Sprinkle with cilantro at the end if desired. Enjoy!

A sweet memory
Well MR. Canner it was fun and we will spend time together next year. I officially put away my canner for the year. Potaotes, green beans and apples all got canned this summer. Hopefully the tomatoes will start putting on and I can water bath them. Hope everyone is enjoying the cooler temps eventhough they are temporary. The first cold front is always the best one.

Wow summer has gone by fast
School starts in less than 2 weeks here. This summer has flown by fast. Between summer school, Steve's clinicals, ballgames, swimming lessons and canning we stayed busy. Good News- Steve is now employed with Tule Creek EMS. He will continue school and work and graduate next May. When school stats Brett will be in 1st grade and Will will start pre-k. Whew
We have officially survived another Germanfest and Suds-n- sounds. We finally made it home around 3 am this morning. We were in charge of the concession stand at the ballpark so we had to clean up after it was over. Steve was on duty yesterday until 3 so it was a busy, busy day. I didn't even take the camera to germanfest yesterday but it was GREAT as usual.

Busy, busy , busy
Steve has had clinicals since the end of May and I taught summer school for 3 weeks so we have gotten nothing accomplished until now. We also threw in basketball camp, state shorthorn show and baseball. Brett won 1st in his class at the state shorthorn show so he was excited. So today we worked in the house and then the yard. We had some huge weeds and we pulled and pulled and pulled some more. The yard is starting to look really good so we will keep pulling those weeds. We got our first vegetables out of the garden today- 2 squash but it is a start. Tomorrow we start canning potatoes. I love canning so it will be more fun than a chore. Hope everyone is having a great summer and let us hear from you.

4th of July
We seem to always end up at Kay and Boyd's for the 4th and this year was no exception. Steve was on call all weekend so he had to be over there. We cooked burgers and enjoyed lots of fireworks with the cousins and Dylan. Guac and hot sauce on a burger is awesome, I will never eat another plain one again. Here are some pics from last night. Naner pudding
This is the easiest and best naner pudding.
1 large box instant vanilla pudding
1 C water
1 can sweetned condensed milk
1/2 to 1 tsp. banana extract
1 tub cool whip
2 to 3 bananas sliced
1 box vanilla wafers
Mix pudding, water, extract and sweetned condensed milk and put in th frig for about 10 minutes. Fold in cool whip. Then add bananas and wafers. Mix well and refrigerate. This is like the stuff they serve at Acuff steak house.
