Brett's bodacious chocolate chip cookies


These cookies have won us many ribbons.

1 C butter flavored Crisco
3/4 C brown sugar
3/4 C white sugar
2 eggs
1 tsp. vanilla
2 1/4 C flour
1 tsp. baking soda
1/2 tsp. salt
1 package of chocolate chips

Mix shortening and sugars. Add the dry ingredients. Mix well and add the chips. Bake at 375 degrees for 8-10 minutes.

PW's oatmeal crispies


Another PW great recipe.

1 C Crisco- we used butter flavored
1 C white sugar
1 C brown sugar
2 eggs
1 tsp. vanilla
1 1/2 C all purpose flour
1 tsp. salt
1 tsp. baking soda
3 C quick oats- we just used regular oatmeal and have used 3 pkts of instant oatmeal
1/2 C chopped pecans- still great without

Cream sugars and shortening. Add eggs and vanilla and stir to combine. In a separate bowl mix flour, salt and baking soda. mix into the other mixture and stir until combined. Mix in oats and stir to combine.

She wraps hers into rolls and refrigerates to chill. We just scoop it onto cokkie sheets and cook. Bake at 350 degrees for 10 minutes.

Monkey bread


3 pkgs of biscuits
cinnamon sugar mixture
1 stick butter
1 C brown sugar

Cut biscuits in 4 pieces and roll in cinnamon sugar mixture. Place in a well greased bundt pan. In a small saucepan, melt butter and brown sugar. Pour over biscuits and cook at 350 for 35 minutes. Cool for 10 minutes and invert on a plate. YUMMO

Cheeseburger buns


These are so quick and easy to heat up. I'm posting the recipe for my reference.

Cheeseburger buns

2 packages active dry yeast
1/2 C warm water
3/4 C warm milk
1/4 C sugar
1/4 C shortening
1 egg
1 tsp salt
3 1/2-4 C flour

Put into the bread machine in the order your machine says and set it to dough setting.

Filling
1 lb. ground beef
1/4 C chopped onion
1 can 8 oz. tomato sauce
8 slices american cheese

cook beef and onions until done. Drain and season. Add tomato sauce and remove from heat. Punch down dough and then divide into 16 pieces. Roll out each piece of dough to a 5 in. circle. Put a piece of cheese down and 2-3 T of meat mixture. Bring doughover mixture and seal. Place seam side down on a greased baking sheet. Let rise for 20 minutes. Bake at 400 for 8-12 minutes or until golden brown.

These rib eyes with whiskey sauce were too die for. We had to use tequila for the whiskey. Steve was afraid he would put too much tequila in it. Seriously, can you have too much tequila?

The calf ridin'



Will was the one that wanted to go ride a baby heifer. So we go out to the farm and got the babies separated from their mommas. Brett rode for a few seconds and Will less than 10 but he jumped off on his own and said NO MORE. Those babies are so cute!!!

Flying by the seat of your pant burritoes


I found this recipe in a cook book I got for Christmas. It is definetly not gourmet but really good.

1 1/2 lbs ground beef
1 package Schilling's burrito mix
1 8oz can tomato sauce
1 12 oz can refried beans
Tortillas

Place uncooked meat in skillet and and sprinkle the burrito mix on top of the uncooked meat evenly. (They say this is the key) No salt or pepper needed as the mix has plenty of sodium. Cook until done and drain the grease. Add tomato sauce and then bring to a boil. REduce heat, cover and simmer for at least 15 minutes but 30 is better. Add beans and bring back to a boil. Spoon into tortillas and eat. We added cheese. The possibilities of what to add are endless.

Laundry detergent and tub cleaner

I was asked if I would put this on here so here goes.

Laundry detergent
1 bar of ivory soap grated
1/2 C of washing soda- not baking soda
1/2 C borax

Mix together and use 1T per load. I promise that is all you need to use.


Tub cleaner
1/4 C dawn dishwashing detergent
white vinegar

Fill a squirt bottle with the dawn soap and the rest of the way with white vinegar. Shake well and then shake everytime before you use it. You will be amazed. The recipe says that if it is really bad grime leave for 15 minutes. I just spray it down and by the time I get the rest of the bathroom done it has it all removed.

The Macaroni and Cheese-PW style




PW's Mac and cheese

4 C dry macaroni
1 egg beaten
1/4 C or 1/2 stick of butter
1/4 C flour
2 1/2 C milk
2 heaping teaspoons dry mustard- we left it out bc we didn't have any.
1 lb. cheddar or other cheese- grated
1/2 t salt
1/2 t seasoned salt
1 t pepper

Cook the macaroni until very firm. It should be too firm to eat out of the pot. Drain. In a small bowl beat the egg. In a large pot melt the butter and sprinkle in the flour. Whisk it together over medium low heat for 5 minutes whisking constantly. Pour in the milk and add the mustard. Whisk until smooth and cook for 5 more minutes until very thick. Reduce heat to low. Temper the egg slowly by adding 1/4 c of the hot mixture to the egg stirring constantly. Pour the egg mixture in to the sauce and whisk until smooth. Add all but 1/2 C of the cheese and stir until melted. Add the seasonings, we needed more salt. Pour into the cooked macaroni and stir to combine. Top with the 1/2 c of cheese you still have. Bake at 350 degrees for about 20- 25 minutes.

Valentine dinner


Seasoned corn with bacon- bacon grease is always a good seasoner.
2 bacon strips cooked and diced
1 2/3 C frozen corn, thawed
1 T finely chopped onion
1/8 t garlic powder
1/8 t lemon pepper seasoning
1/8 t dried basil

Cook bacon and reserve 1/2 tsp of the drippings. Saute corn, onion and seasonings in reserved drippings until corn is tender.

Everyone is the family loved it.

Laundry



Woo hoo the laundry is done for the week. My goal is to have it all done by Tuesday and this week we met goal. I was so excited I took pictures.

New week and nothing really to post


WE dodged the bullet with the snow yesterday but more is expected for Thursday. I am so ready for spring and the beautiful ground that is not covered in snow. I really like the green grass in this picture.

THE cinnamon rolls


These cinnamon rolls came from the Pioneer woman's website. They are as delicious as she said they were.

dough:
1 qt. milk
1 C vegetable oil
1 C sugar
2 pkg. yeast
9 C flour
1 tsp. baking soda
1 tsp. baking powder
1T. salt

Mix milk, oil and sugar over medium heat. Do not let boil. Set aside and cool to lukewarm. Sprinkle the yeast on top of mixture and let set one minute. Add 8 C of flour. Stir until just combined. Cover with a clean kitchen towel and set aside in a warm place for an hour. That would not be outside today. Remove the towel and add the baking powder, soda, salt and the other cup of flour. Stir really good to combine.

To assemble the rolls, remove half the dough from the pan and on a floured surface roll out a rectangle around 30 x 10 inches.

Filling:
2C melted butter
1/4 C ground cinnamon
2 C sugar

To make the filling, pour 1 cup of the melted butter over the surface of the dough. Use your fingers to spread the butter evenly. Generously sprinkle half of the ground cinnamon and 1 C of the sugar over the butter.

Don't be afraid to drizzle on more butter or sugar.

Now beginning at the end farthest from you roll the rectangle tightly toward you. Use both hands and work slowly being careful to keep the roll tight.

When you reach the end pinch the seam together. Pour a tablespoon or so of butter into the pan and swirl to coat. Cut the roll into 1 1/2 in slices and put in the pan.

BAKE in a 350 degree preheated oven for 13-17 minutes.

MAPLE ICING
2 lbs. powdered sugar
1/2 C whole milk
6 T butter melted
1/4 C strongly brewed coffee
dash of salt
1 T maple flavoring or extract
The icing should be thick but pourable.

Ice the rolls while they are still warm being sure to entirely cover the rolls.

Cheese soup


The pic would look a lot better if it wasn't in a plastic container. Oops, forgot to take the picture before I put it up. This soup was very good.

Cheese soup

1/2 stick butter
3 green onions chopped
3 stalks of celery chopped
2-3 carrots grated
2 10.75 oz can of chicken broth
3 cans cream of potato soup
8 oz. grated cheese- i used mild cheddar
8 oz. sour cream

Saute' onions, celery and carrots in butter. Add chicken broth and simmer covered for 30 minutes. Add cream of potato soup and cheese. Stir until melted. Add sour cream. Salt and pepper to taste. It didn't take much salt. Simmer for 15 minutes.

the DATE

Steve and I had a real live date last night. No kids and we even went to a real resteraunt not one you drive thru. Joe Tacos was really good. We did get to go to the high class establishment WAL MART for me an iron but it was a great night. The boys were excited because they got to stay with Nana and Papa the whole night. It has been awhile since they got to do that
