Cheese soup


The pic would look a lot better if it wasn't in a plastic container. Oops, forgot to take the picture before I put it up. This soup was very good.

Cheese soup

1/2 stick butter
3 green onions chopped
3 stalks of celery chopped
2-3 carrots grated
2 10.75 oz can of chicken broth
3 cans cream of potato soup
8 oz. grated cheese- i used mild cheddar
8 oz. sour cream

Saute' onions, celery and carrots in butter. Add chicken broth and simmer covered for 30 minutes. Add cream of potato soup and cheese. Stir until melted. Add sour cream. Salt and pepper to taste. It didn't take much salt. Simmer for 15 minutes.
